4 cups spinach
1 cup cooked quinoa
1/2 cup cottage cheese
1/2 cup egg white
3 tablespoons basil
1/4 panko breadcrumbs
sea salt

Add avocado oil to a skillet and heat to medium. Add zucchini, onion, garlic and cook for 5 minutes, until tender.

Add in spinach and continue cooking on medium heat and cook for another 3-5 minutes. Season with salt and pepper to taste.

Remove from heat and transfer mixture to a large mixing bowl. Add in quinoa, cottage cheese & basil, mix well.

Mix in 1/2 of the panko breadcrumbs.

Pour mixture into baking dish and sprinkle the remaining 1/8 cup of breadcrumbs.

Bake in a preheated oven at 350°F for 30-45 minutes.
