Moroccan Brisket Sliders

Trim excess fat from the brisket, leaving some for flavor.
Season brisket generously with salt and cracked black pepper, then apply Moroccan seasoning.
Place the seasoned brisket on a cake rack and refrigerate overnight to dry brine.
Remove brisket from the fridge and let it sit for 30 minutes at room temperature.
Preheat the oven to 115°C (239°F).
Insert a thermometer into the thickest part of the brisket, targeting an internal temperature of 88°C (189°F).
Place brisket in the oven and cook for 3 to 4.5 hours, depending on thickness.
While the brisket cooks, prepare the Moroccan slaw by mixing mayonnaise, grated orange zest, and Moroccan seasoning.
Slice half a cabbage thinly and add to the slaw mixture, keeping it crisp until ready to serve.
Once the brisket reaches 88°C, remove it from the oven and let it rest for 30 minutes without covering it.
After resting, slice the brisket and assemble sliders with brisket, slaw, and slider buns.
