Originating from Jamaica, jerk pork is a vibrant dish that reflects the island's rich culinary heritage, combining spicy, sweet, and smoky flavors. Traditionally cooked over pimento wood, it has become a staple at barbecues and gatherings, often served with rice and peas. 1

Marinate pork shoulder with jerk seasoning for at least 2 hours, preferably overnight.

2

Heat vegetable oil in a large skillet over medium heat.

3

Sear the marinated pork on all sides until browned, about 5-7 minutes.

4

Remove pork from skillet and set aside.

5

In the same skillet, add chopped onion, garlic, and ginger; sauté until fragrant, about 2-3 minutes.

6

Add bell peppers and cook until slightly softened, about 3-4 minutes.

7

Stir in pineapple chunks, soy sauce, brown sugar, and lime juice; cook for another 2-3 minutes.

8

Return the pork to the skillet, cover, and simmer on low heat for 45 minutes to 1 hour, until tender.

9

Check for doneness; pork should be fork-tender and juices should run clear.

10

Remove pork from skillet and let rest for 10 minutes before slicing.

11

Slice the pork and serve with the sweet and sour sauce over the top.

12

Garnish with chopped scallions and serve with rice or bread.
