Rinse 1/2 cup masoor dal under cold water until the water runs clear.

In a pressure cooker, add 1 tablespoon olive oil.

Add chopped garlic and sauté lightly.

Add chopped ginger and chopped onion; sauté until they soften but do not brown.

Add the rinsed masoor dal and sauté for 1 minute.

Add 2 chopped medium tomatoes, salt, and red chili powder to taste.

Pour in 2-2.5 cups of water and mix well.

Close the pressure cooker lid and cook on high flame for 3-4 whistles.

After 3-4 whistles, turn off the gas and let the pressure release naturally.

Open the cooker and let the dal cool slightly before blending it until smooth.

Strain the blended dal through a steel strainer to remove any chunks.

Check the consistency and add more water if needed; add 2 cups of water if necessary.

Put the strained dal back on the gas and bring it to a boil, checking the salt and seasoning.

Once it boils, turn off the gas and serve hot, garnished with a squeeze of lemon juice, black pepper, and mint leaves.
