Prepare the ingredients: 1/2 cup sev, 1 cup roasted peanuts, 3 boiled and mashed potatoes, and the spices for dabeli masala.

In a pan, heat and dry roast 1 tablespoon fennel seeds, 1 inch cinnamon stick, 1.5 teaspoons coriander seeds, 1 teaspoon cumin seeds, 5-6 cloves, 3-4 whole dried red chilies, and 10 black peppercorns on low flame for 5-7 minutes until fragrant.

Once roasted, turn off the heat and let the spices cool down.

Transfer the cooled spices to a mixer jar and grind them coarsely to make dabeli masala.

For garlic chutney, soak whole dried red chilies in water for 30 minutes, then blend them with 2 tablespoons of water, 5-6 garlic cloves, and salt to taste until smooth.

In a pan, heat 1 tablespoon of oil and add 1.5 teaspoons of dabeli masala, cooking it on medium flame for 2 minutes.

Add the boiled mashed potatoes and salt to taste, mixing well.

Add approximately 1/4 cup of water to the potato mixture and cook until the water is absorbed, about 4-5 minutes.

Optionally, add 1/2 teaspoon of sugar for sweetness and mix well, cooking for an additional 2 minutes.

Spread the potato mixture on a plate to cool.

Top the mixture with grated coconut or fresh coconut, roasted peanuts, fresh coriander leaves, and pomegranate seeds.

In a mixing bowl, combine 1/2 cup roasted peanuts, 1/2 tablespoon dabeli masala, a pinch of salt, and 1/2 tablespoon of oil, mixing well to coat the peanuts.

Take a burger bun and spread garlic chutney on one side and tamarind chutney on the other side.

Place the dabeli mixture on the bun, ensuring it is well-filled.

Add the spiced peanuts on top and cover the bun.

Repeat the process for all buns.

In a pan, heat butter and place the prepared dabeli burgers, toasting them on medium-high flame until golden brown on both sides.

Once done, remove from the pan and serve hot.
