Ingredients
- ●6 egg yolks
- ●3/4 cup granulated sugar
- ●2/3 cup milk
- ●1 1/4 cups heavy cream
- ●8 oz mascarpone cheese
- ●1 cup brewed espresso, cooled
- ●1/4 cup coffee liqueur
- ●24 ladyfinger cookies
- ●2 tbsp unsweetened cocoa powder
- ●1 oz dark chocolate, grated
Instructions
- 1In a medium saucepan, whisk together egg yolks and sugar until well combined.
- 2Add milk to the saucepan and cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon. Remove from heat and let cool.
- 3In a large bowl, whip the heavy cream until stiff peaks form.
- 4Fold the mascarpone cheese into the cooled egg mixture until smooth, then gently fold in the whipped cream until fully combined.
- 5In a shallow dish, combine the brewed espresso and coffee liqueur.
- 6Quickly dip each ladyfinger into the espresso mixture, ensuring they are soaked but not soggy.
- 7Layer half of the soaked ladyfingers in the bottom of a 9x9 inch dish.
- 8Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly.
- 9Repeat the layers with the remaining ladyfingers and mascarpone mixture.
- 10Cover and refrigerate for at least 4 hours, or overnight for best results.
- 11Before serving, dust the top with cocoa powder and sprinkle with grated dark chocolate.

- ●1/2 lb smoked fish (such as smoked haddock)
- ●2 cups milk
- ●1/4 cup butter
- ●1/4 cup all-purpose flour
- ●1 onion, chopped
- ●2 carrots, diced
- ●1 cup frozen peas
- ●1 tsp dried dill
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/4 tsp nutmeg
- ●2 cups mashed potatoes (prepared)
- ●1/2 cup grated cheese (optional)
Instructions
- 1Preheat the oven to 400°F (200°C).
- 2In a saucepan, melt the butter over medium heat. Add the chopped onion and diced carrots, and sauté until softened, about 5 minutes.
- 3Stir in the flour and cook for 1-2 minutes, then gradually whisk in the milk until smooth. Cook until the sauce thickens, about 5 minutes.
- 4Add the white fish fillets and smoked fish to the sauce, along with the frozen peas, dill, salt, pepper, and nutmeg. Stir gently to combine and cook for another 5 minutes until the fish is just cooked through.
- 5Transfer the fish mixture to a baking dish and spread it evenly.
- 6Top the fish mixture with the prepared mashed potatoes, spreading it out to cover completely. If desired, sprinkle grated cheese on top.
- 7Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and the filling is bubbling.
- 8Remove from the oven and let it cool for a few minutes before serving.
