  • 6 egg yolks

  • 2/3 cup milk
  • 1 1/4 cups heavy cream
  • 8 oz mascarpone cheese
  • 1 cup brewed espresso, cooled
  • 1/4 cup coffee liqueur
  • 24 ladyfinger cookies
  • 2 tbsp unsweetened cocoa powder
  • 1 oz dark chocolate, grated

Instructions

  1. 1In a medium saucepan, whisk together egg yolks and sugar until well combined.
  2. 2Add milk to the saucepan and cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon. Remove from heat and let cool.
  3. 3In a large bowl, whip the heavy cream until stiff peaks form.
  4. 4Fold the mascarpone cheese into the cooled egg mixture until smooth, then gently fold in the whipped cream until fully combined.
  5. 5In a shallow dish, combine the brewed espresso and coffee liqueur.
  6. 6Quickly dip each ladyfinger into the espresso mixture, ensuring they are soaked but not soggy.
  7. 7Layer half of the soaked ladyfingers in the bottom of a 9x9 inch dish.
  8. 8Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly.
  9. 9Repeat the layers with the remaining ladyfingers and mascarpone mixture.
  10. 10Cover and refrigerate for at least 4 hours, or overnight for best results.
  11. 11Before serving, dust the top with cocoa powder and sprinkle with grated dark chocolate.

  • 1 lb white fish fillets (such as cod or haddock)
  • 1/2 lb smoked fish (such as smoked haddock)
  • 2 cups milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 cup frozen peas
  • 1 tsp dried dill
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 2 cups mashed potatoes (prepared)
  • 1/2 cup grated cheese (optional)

Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2In a saucepan, melt the butter over medium heat. Add the chopped onion and diced carrots, and sauté until softened, about 5 minutes.
  3. 3Stir in the flour and cook for 1-2 minutes, then gradually whisk in the milk until smooth. Cook until the sauce thickens, about 5 minutes.
  4. 4Add the white fish fillets and smoked fish to the sauce, along with the frozen peas, dill, salt, pepper, and nutmeg. Stir gently to combine and cook for another 5 minutes until the fish is just cooked through.
  5. 5Transfer the fish mixture to a baking dish and spread it evenly.
  6. 6Top the fish mixture with the prepared mashed potatoes, spreading it out to cover completely. If desired, sprinkle grated cheese on top.
  7. 7Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and the filling is bubbling.
  8. 8Remove from the oven and let it cool for a few minutes before serving.
