Tofu is lower in calories and suitable for vegetarians; chicken thighs are more budget-friendly.

Prepare the chicken by cutting it into bite-sized pieces and trimming excess fat.

Toss the chicken pieces in olive oil and season with all-purpose barbecue rub.

Preheat the 28 inch Weber griddle to medium heat and oil the surface.

Spread the cooked rice on the griddle and let it fry for a couple of minutes until it starts to brown.

Add the seasoned chicken to the rice and cook until the chicken is fully cooked and browned.

Make space in the center of the griddle, add more oil, and then add the frozen peas and carrots.

Mix the rice, chicken, and vegetables together once the chicken is cooked and the veggies have softened.

Drizzle soy sauce, sesame oil, and bachan's Japanese barbecue sauce over the mixture and stir to combine.

Make a well in the center and crack in 3 eggs, scrambling them until cooked through.
