1

Pat the steaks dry with a paper towel.

2

Cut off excess unwanted fat from the steaks.

3

Generously season the steaks on both sides with salt and black pepper.

4

Preheat the pan on high heat and add avocado oil.

5

Once the pan is hot, add the steaks and flip them every minute until they reach desired doneness (medium rare at about 135 degrees Fahrenheit).

6

When the steaks are ready, set aside on a plate and let them rest for five minutes.

7

In the meantime, add three chopped shallots to the pan and lightly season with salt and pepper.

8

Add about 125 grams of chopped cremini mushrooms and about 2 tablespoons of butter to the pan and mix.

9

While the butter is melting, add 2 cloves of fresh garlic to the pan.

10

Next, add one tablespoon of Dijon mustard and one tablespoon of oyster sauce to the pan and mix everything in.

11

Add 1/4 cup of brandy to the pan, tilt it to the side, and safely light it on fire to burn off the alcohol.

12

Once the alcohol is burnt off, add 3/4 cup of heavy cream to the pan and mix it in.

13

Let the sauce reduce in size until it becomes thicker, then remove from heat.

14

Spread the sauce on top of the steaks and serve.
