Welcome to the channel; introduce the shrimp bisque recipe as a Christmas dinner starter.
Use frozen shrimp, ensuring they are easy peel, and save the shells for flavor.
Cut shrimp into bite-sized pieces and refrigerate while preparing the broth.
Heat a Dutch oven on medium-high heat and add 2 tablespoons of butter.
Once the butter is foamy, add shrimp shells and any collected water from the shrimp bowl.
Cook the shells until they turn pink to flavor the broth.
Add water to the shells, along with 6-7 sprigs of fresh thyme, 2 bay leaves, 1 teaspoon of whole peppercorns, and 1 teaspoon of dried thyme.
Cover and let simmer for at least 10 minutes.
After simmering, strain the stock into a large bowl using a sieve, pressing solids to extract more liquid.
Discard solids and set aside the shrimp broth.
In a cleaned stock pot, add 2 tablespoons of butter.
Add 1 cup of diced red onion, 1/2 cup of diced carrot, and 1/4 cup of diced celery.
Add 2 sliced cloves of garlic and season with salt and pepper to taste.
Turn off the flame before adding 1/2 cup of French brandy to avoid fire hazards.
Let the brandy simmer until half has evaporated.
Add the reserved shrimp stock and 1/4 cup of tomato paste to the pot.
Cover and let simmer for 5 minutes to soften the vegetables.
Transfer the mixture to a blender and blend on high until smooth.
Ensure the bisque is hot before adding shrimp to avoid overcooking.
Add shrimp and any remaining liquid from the bowl, stirring gently.
Cook for 1-2 minutes until shrimp are pink and cooked through.
Taste for seasoning before serving.
