Vegetable stock maintains flavor while being lighter.
Heat a pot on medium heat and add extra virgin olive oil and butter.
Stir the oil and butter together.
Add chopped carrots, celery, onions, and optional leeks to the pot.
Add minced garlic to the pot.
Stir in tomato paste and mix well with the vegetables.
Add peppercorns and season with asil seasoning (or seasoned salt, onion powder, and garlic powder).
Deglaze the pot with cooking cherry and cognac, mixing well.
Add flour to the mixture as a thickening agent.
Cook the vegetables for 10 to 12 minutes until soft.
In a separate pan, cook shrimp on medium-high heat with butter, garlic and herb seasoning, and fresh lemon for about 2 minutes.
Set the cooked shrimp aside to prevent overcooking.
Add seafood stock to the pot with the cooked vegetables.
Blend the mixture using an immersion blender until smooth (or use a regular blender or food processor).
Add a couple of shrimp to the blended mixture for extra flavor.
Keep the heat on low simmer while blending.
Add heavy cream to the blended mixture and ensure the heat is on simmer to prevent curdling.
Let the bisque simmer for 5 to 7 minutes until done.
Garnish the bisque with fresh dill and sour cream.
