1 TBSP ginger paste
½ cup chana dal (soaked overnight)
¼ cup water
2 cups arvi leaves (finely chopped)
1 cup spinach leaves (finely chopped)
1 Tsp turmeric powder
1 Tsp red chili powder
1 TBSP goda masala
salt to taste
1 Tsp tamarind concentrate
1 Tsp jaggery
1 cup water

In a bowl, add 1 TBSP besan and 2 TBSP water. Mix well, making sure there are no lumps.

Heat a pan/kadai on medium heat and add 1 TBSP vegetable oil.

Once the oil is hot, add 1 Tsp mustard seeds, 1 Tsp cumin seeds, and ¼ Tsp hing powder.

Add 1 TBSP ginger paste and ½ cup soaked chana dal to the pan. Sauté for 1-2 minutes.

Pour in ¼ cup water, cover, and cook for 2-3 minutes.

Add 2 cups finely chopped arvi leaves and 1 cup finely chopped spinach leaves. Mix well and note that the leaves will shrink as they start to cook.

Sprinkle in 1 Tsp turmeric powder, 1 Tsp red chili powder, 1 TBSP goda masala, and salt to taste.

Add 1 Tsp tamarind concentrate, 1 Tsp jaggery, and the previously prepared besan slurry. Mix well.

Pour in 1 cup water and mix thoroughly.

Cover and cook for 7-8 minutes on low to medium flame.

Serve hot with choice of roti or rice.
