Heat a large pot over medium heat.
Add the massaman curry paste and stir-fry for 1-2 minutes until fragrant.
Add the beef and brown on all sides, about 5-7 minutes.
Pour in the coconut milk and stir to combine.
Add diced potatoes, onion, and bay leaves to the pot.
Season with fish sauce, brown sugar, and salt.
Add water to cover the ingredients and bring to a simmer.
Reduce heat to low and cover, cooking for 1.5 to 2 hours until beef is tender.
Stir occasionally and add more water if necessary to prevent sticking.
Add lime juice, peanuts, and cinnamon stick in the last 15 minutes of cooking.
Taste and adjust seasoning as needed.
Remove bay leaves and cinnamon stick before serving.
Serve with steamed rice and garnish with fresh cilantro.
