Trim the tops and tails of the okra and make a slit on one side without cutting through.

In a frying pan, heat 1/4 cup of gram flour on low heat for 4 minutes until fragrant, stirring continuously to avoid burning.

In a plate, mix the heated gram flour with 2 tablespoons of white sesame seeds, 1 teaspoon of cumin powder, 1/2 teaspoon of asafoetida, and 1 teaspoon of red chili powder.

Add 2 tablespoons of oil to the mixture and mix well, adjusting the spices to taste.

Stuff the prepared mixture into the okra, filling each pod with about 1 teaspoon of the stuffing.

In a frying pan, heat 3 tablespoons of oil until hot, then add 1 teaspoon of cumin seeds and 1/2 teaspoon of asafoetida until they splutter.

Carefully place the stuffed okra in the pan and cook on low flame for about 15 to 17 minutes, covering the pan for 5 minutes at a time to allow the okra to cook through.

After 5 minutes, gently stir the okra to ensure the stuffing does not come out, and sprinkle more stuffing on top if needed.

Once cooked, drizzle 1 tablespoon of lemon juice over the okra and garnish with chopped coriander before serving.
