Gather all ingredients: 3 cans of evaporated milk, ground cinnamon, salt, cinnamon sticks, star anise, 4 unrefined cocoa balls, butter, almond extract, Haitian vanilla extract, and optional nutmeg.

In a pot, add a total of 8 cups of water (2 cups + 6 cups).

Add the cinnamon sticks and star anise to the water.

Bring the water to a boil.

Once boiling, add all 4 unrefined cocoa balls to the pot.

Let the mixture boil and then simmer until the cocoa is fully melted and the mixture is thickened.

Keep the lid slightly on to prevent overflow while it thickens.

After thickening, strain the mixture to remove any cocoa clumps.

Return the strained hot chocolate to the stove.

Add 2 tablespoons of butter to the hot chocolate.

Add ground cinnamon to taste.

Add a capful of Haitian vanilla extract and a capful and a half of almond extract.

Stir in about 1.5 cups of sugar, adjusting to taste.

Let the hot chocolate come to a simmer again before serving.
