Haitian Hot Chocolate

Cultural Context

Haitian hot chocolate, or 'chocolat chaud,' has deep roots in the country's history, blending African, French, and indigenous influences. Traditionally enjoyed as a comforting beverage, it is often served during special occasions and family gatherings. Today, it has gained popularity beyond Haiti, celebrated for its rich flavor and unique spices that set it apart from other hot chocolate recipes.

8 cups water
2 to 3 cinnamon sticks
6 star anise
1 block of unrefined cocoa
2 cans of evaporated milk
0.5 to 0.75 cups of sugar
1 teaspoon of salt
1 capful of almond extract
1 teaspoon of nutmeg
1 tablespoon of unsalted butter
Haitian bread for dipping
1

Add 8 cups of water to a pot.

2

Add 2 to 3 cinnamon sticks, 6 star anise, and 1 block of unrefined cocoa to the pot.

3

Allow the mixture to boil until it reduces to half, about 4 cups of liquid.

4

Once reduced, ensure the cocoa is fully dissolved and the liquid is thick.

5

Strain the chocolate mixture to achieve a silky smooth consistency, removing the cinnamon sticks and star anise.

6

Rinse the cinnamon sticks and star anise under cool water and set aside.

7

Return the strained chocolate to the cleaned pot and add the rinsed cinnamon sticks and star anise back in.

8

Add 2 cans of evaporated milk to the pot.

9

Add 1 teaspoon of salt to the mixture.

10

Add 1 capful of almond extract, 0.5 to 0.75 cups of sugar, 1 teaspoon of nutmeg, and 1 tablespoon of unsalted butter.

11

Stir the mixture well and lower the temperature to medium-medium low.

12

Allow the chocolate to cook for about 15 to 20 minutes until it is rich, smooth, and silky.
