Rinse the red lentils under cold water until the water runs clear.
In a pot, combine lentils and water, then bring to a boil over medium heat.
Reduce heat and simmer until lentils are tender, about 15-20 minutes.
In a separate pan, heat cooking oil over medium heat and add cumin seeds until they sizzle.
Add chopped onions and sauté until golden brown, about 5-7 minutes.
Stir in minced garlic, ginger, and green chili; cook for 1-2 minutes until fragrant.
Add chopped tomatoes and cook until they soften, about 5 minutes.
Mix in turmeric powder, coriander powder, and salt; stir well to combine.
Add the cooked lentils to the pan and mix thoroughly with the spices.
Fold in the fresh spinach and cook until wilted, about 3-4 minutes.
Sprinkle garam masala over the top and stir to combine.
Remove from heat and add lemon juice for brightness.
Serve hot with rice or flatbread.
