Trim the thin parts off the salmon fillets to ensure even cooking and presentation.
Season both sides of the salmon fillets with salt and black pepper, using a seasoning blend if desired.
Heat an oven-safe skillet over medium heat and add 1 tablespoon of avocado oil.
Add the salmon fillets to the skillet, presentation side down, and press down to ensure maximum contact with the skillet.
Cook the salmon for about 3-4 minutes until golden brown, then flip and cook skin side down for the rest of the cooking time.
Remove excess oil from the skillet and add 3 tablespoons of Kerrygold butter, basting the salmon with the melted butter.
Transfer the skillet to a preheated oven at 400 degrees Fahrenheit and cook for about 10 minutes or until the salmon reaches an internal temperature of 130 degrees Fahrenheit for medium doneness.
In the same skillet, over medium-low heat, add the diced shallot and minced garlic to the leftover butter and sauté until fragrant.
Add 2 tablespoons of lemon juice and 1/4 cup of capers to the skillet, followed by optional red pepper flakes, and season to taste.
Deglaze the skillet with 1/2 cup of dry white wine, bringing it to a boil to cook off the alcohol.
Reduce the sauce, then add chicken broth and 2 tablespoons of butter, allowing it to emulsify into the sauce before serving over the salmon.
