Steam half a can of jackfruit for 10 minutes.
Chop the steamed jackfruit, including the seeds if desired.
In a bowl, combine shredded jackfruit with one pound of Impossible meat.
Season the mixture with garlic powder, onion powder, smoked paprika, and black pepper, then mix with hands.
Press the mixture into desired steak shapes on a parchment-lined baking sheet.
Freeze the formed steaks for about an hour to firm up.
Set up a dredging station with half a cup of flour, half a cup of cornstarch, and one tablespoon of baking powder.
Add two teaspoons each of garlic powder, onion powder, smoked paprika, and one teaspoon each of cayenne and white pepper, along with one to two teaspoons of salt, and whisk together.
Prepare the wet batter with one cup of unsweetened plant milk, one tablespoon of apple cider vinegar, and whisk in a quarter cup of flour, adding more flour until achieving a thin pancake batter consistency.
Heat neutral oil to 375 degrees Fahrenheit.
Dredge the firm vegan steaks in the flour, then dip in the wet batter, and coat again in flour before frying.
Fry the steaks in hot oil for about five minutes until golden brown, then rest on a wire rack or keep warm in an oven set to 250 degrees Fahrenheit.
For the gravy, melt a quarter cup of unsalted vegan butter, then whisk in four tablespoons of flour one at a time, cooking for a minute to remove raw flour taste.
Slowly whisk in two cups of unsweetened plant milk, adding black pepper to taste, and simmer for six to seven minutes until desired consistency is reached.
