Today, egg noodles have crossed borders, inspiring variations in Italian pasta and other global cuisines, making them a beloved staple worldwide.

Tofu is a plant-based protein and more affordable.
Add 3 cups of all-purpose flour to a food processor and pulse a few times to aerate the flour.
Add 2 to 3 eggs (2 if standard size, 3 if smaller) to the food processor and whisk well before adding.
Run the food processor for about 30 seconds until the mixture resembles a breadcrumb consistency.
If the mixture is too dry, add water one tablespoon at a time (2 tablespoons used in the video) until it forms a shaggy dough ball.
Knead the dough for 1-2 minutes until smooth and well incorporated.
Wrap the dough in plastic wrap or place it in a plastic bag and let it rest for 15 minutes (can rest up to 2 hours).
Separate the dough into three pieces and roll each piece through a pasta roller starting on the widest setting.
Run the dough through the pasta roller twice on the widest setting for smoothness.
Narrow the roller setting one notch at a time, rolling the dough through until desired thickness is achieved (about setting 4 shown in the video).
Use a pasta cutter attachment to cut the rolled dough into noodles, collecting them to prevent sticking.
Dust the noodles with flour to prevent sticking and lay them out to dry on a cookie sheet or make nests for drying.
Let the noodles dry for about 24 hours, flipping them over once during the drying process.
If rolling by hand, roll the sheet of pasta on itself and slice into desired widths for noodles.
Cook the fresh pasta in boiling water for about 3 minutes, tasting for tenderness.
Serve the cooked noodles with butter, parmesan, parsley, and a drizzle of balsamic vinegar.
