Tofu is a plant-based protein and more affordable.
Boil a little more than 1 liter of water in a large pot.
Add 1 teaspoon of oil to the boiling water.
Optionally, add up to 0.5 teaspoon of salt (not added in the video).
Break the wheat noodles into smaller pieces and add 400 grams to the boiling water.
Cook the noodles on high flame until they are 70-80% cooked (do not overcook).
Once cooked, drain the noodles and let them cool in a separate bowl.
In a large pan, heat 2-3 tablespoons of oil.
Crack 3 eggs into the pan and scramble them.
Add salt to taste after the eggs are in the pan.
Mix the scrambled eggs well and keep them in large pieces.
Add 1 cup of finely chopped green beans, 2 cut green chilies, 2 long-cut carrots, and 1 cup of long-cut cabbage to the pan.
Stir-fry the vegetables on high flame until well mixed.
Add salt to taste and mix again.
Add the previously cooked noodles to the pan and mix gently.
If the noodles are sticky, add 1 teaspoon of oil and mix well to separate them.
Add 1 teaspoon of black pepper powder, 1 teaspoon of chili powder, 1 teaspoon of red chili sauce, 1 teaspoon of soy sauce, 1 teaspoon of chili sauce, 1.5 teaspoons of tomato sauce, and 1 teaspoon of vinegar to the mixture.
Toss everything together on high flame until well mixed.
Add noodles masala (available in supermarkets) to enhance the taste.
Finally, add finely chopped coriander leaves and mix well.
Turn off the stove and serve the noodles on a plate.
