1

Marinate the oxtail for a day in the fridge with brown oxtail seasoning and green seasoning.

2

Preheat the oven to 400°F (200°C).

3

Brush a thin coat of olive oil in an oven-safe brazer and place it in the oven for 30 minutes to heat up.

4

Add the marinated oxtail to the heated brazer and bake for 1 hour without a lid.

5

Remove the oxtail from the oven and stir to loosen any stuck bits at the bottom of the pot.

6

Pour in boiling water and rinse out the bowl used for marinating, adding that liquid to the pot as well.

7

Cover the pot with a lid and reduce the oven temperature to 350°F (175°C), cooking for 1 hour.

8

Prepare the gravy by mixing ketchup, soy sauce, salt, green onions, minced scotch bonnet, minced garlic, allspice berries, fresh thyme, diced onions, bell peppers, dark brown sugar, and a slurry of cornstarch and water.

9

Add water to the gravy mixture and stir well.

10

Remove the oxtail from the oven and pour the gravy mixture over it, stirring to combine and scraping the sides of the pot.

11

Cover the pot again and return it to the oven for another hour.

12

After the second hour, add butter beans to the pot and cover it, returning it to the oven for an additional 10 minutes.

13

Check the tenderness of the oxtail, as cooking time may vary depending on the age of the animal.
