Jamaican Stewed Beef, a staple in Caribbean cuisine, originates from the island of Jamaica, where it reflects the vibrant flavors and cooking techniques of the region. Traditionally served with rice and peas or dumplings, this dish is often prepared for family gatherings and special occasions, showcasing the rich culinary heritage of Jamaica. Today, it has gained popularity beyond the Caribbean, with many variations emerging worldwide.

Wash 2 pounds of beef and cut it to the size of your desire.
Season the beef with salt, all-purpose seasoning, green seasoning, thyme, garlic, onion, pimento peppers, fresh ginger, and crushed pimento seeds.
Add Browning to the beef for color and mix well.
Cover the beef and allow it to marinate for at least one hour.
In a pot, add cooking oil and sugar to caramelize.
Once the sugar begins to caramelize, add the marinated beef to the pot and mix to soak up the caramelized sugar.
Cook the beef uncovered for a few minutes until it produces its own juices.
Add hot water to the pot to maintain cooking temperature and cover it, cooking on low heat until the beef is tender.
After 15 minutes, check the beef; if tender, add ketchup, chopped carrots, bell peppers, scaling, thyme, and a whole pepper.
Adjust seasoning with salt if needed, then cover and simmer on low heat for another 15 to 20 minutes.
Total cooking time is 1 hour and 20 minutes.
