Preheat a saute pan over medium-low heat.
Add shredded coconut to the pan and stir for about 3 minutes until golden, stirring frequently.
Remove toasted coconut to a bowl and let it cool.
In a large mixing bowl, add all ingredients: organic rolled oats, toasted coconut, organic peanut butter, ground flax seeds, dairy-free chocolate chips, chopped walnuts, date syrup, chia seeds, hemp seeds, vanilla extract, cinnamon, and pink himalayan sea salt.
Stir all the ingredients together until thoroughly combined.
Cover the mixing bowl and let it chill in the refrigerator for about 30 minutes.
Using a cookie scoop, roll the mixture into one-inch balls.
Optionally, roll the balls in shredded coconut, hemp seeds, or organic cacao powder.
