Start by brining the turkey for 12 to 24 hours, using a fridge drawer if necessary.
Clean the turkey from the inside, ensuring it is thoroughly cleaned.
Pat the turkey dry with napkins, making sure it is very dry.
Use dried herbs for seasoning, but fresh herbs can be added for better flavor.
Drizzle olive oil over the turkey.
Gently go under the skin with your fingers to create space for butter.
Mix softened Irish grass-fed butter with fresh rosemary, thyme, salt, and pepper.
Rub the butter generously all over the turkey, massaging it in.
Stuff the turkey with apples, onions, and celery, and add fresh rosemary if available.
Wrap the turkey's legs with string and cover with a buttered cheesecloth to retain moisture.
Preheat the oven to 450°F (232°C) and roast the turkey for 20 to 40 minutes.
After the initial roasting, decrease the oven temperature to 350°F (175°C) and cook for three hours, checking the cooking time based on the turkey's weight.
