1

Go to the garden to gather scotch bonnet peppers, spanish oregano, and guyanese thyme.

2

Peel and prepare 3 whole knots of garlic.

3

Cut 4 pounds of pork shoulder into bite-sized pieces, preferably with good marbling.

4

Wash the meat with 2 limes to remove any rankness, rinsing thoroughly at least three times with clean water.

5

Drain off excess water from the washed meat and set aside.

6

Strip fresh guyanese thyme and add it to the meat.

7

Chop spanish oregano and guyanese merman basil, adding them to the mixing bowl with the meat.

8

Crush the 3 knots of garlic and add to the meat mixture.

9

Add about 10 crushed pimento berries to the meat for extra flavor.

10

Mix all the ingredients together, massaging the seasoning into the meat.

11

Add vinegar to the meat, ensuring it covers the top of the container, and refrigerate for approximately 4 days.

12

After marinating for 4 days, strain the meat to remove excess vinegar and let it sit for about 20 minutes to dry.

13

Heat a hot pan and add the marinated meat, covering it to steam out excess vinegar and render the fat.

14

Add 1 tablespoon of sea salt to the meat and mix well.

15

Add a pinch of sugar to cut the acidity of the vinegar.

16

Cover the pan and let the meat cook in its own oil until it is tender and browned, stirring occasionally.
