In a bowl, mix together 1/4 cup of flour and 1 scoop of vanilla whey protein.
Add 2 tablespoons of applesauce, 1 whole egg, and 2 tablespoons of melted coconut oil to the bowl.
Microwave the coconut oil for 30 seconds to melt it before adding.
Add vanilla extract, ground cinnamon, 1 tablespoon of sweetener, 1 teaspoon of baking powder, and a pinch of salt to the mixture.
Mix all the ingredients together until well combined.
Transfer the batter into a greased coffee cup.
Microwave the cup for 1 minute, then check on it.
Continue microwaving in 30-second intervals until fully cooked, checking each time.
For the glaze, mix 1 tablespoon of light butter with a little cinnamon and 1 tablespoon of sweetener in a dish and microwave until melted.
Drizzle the butter cinnamon glaze over the cooked cinnamon roll.
For the icing, mix 2 tablespoons of light cream cheese with 1 teaspoon of almond milk and 1 tablespoon of sweetener in a small container.
Adjust the icing ingredients to taste, then drizzle it over the cinnamon roll.
