Take a ball of Fathead dough and let it sit at room temperature for about 45 minutes.
Place a sheet of parchment paper on a cutting board and put the dough on it.
Sprinkle a little protein powder on the dough to prevent sticking.
Roll the dough out into a rectangle about 1/4 inch thick, using another sheet of parchment on top if needed.
Soften 4 oz cream cheese and 2 tablespoons butter in the microwave for about 30 seconds until melted.
Mix the softened cream cheese and melted butter together until combined.
Add 1/4 cup keto brown sweetener and 1 tablespoon cinnamon to the mixture and stir until spreadable.
Spread the cinnamon mixture evenly over the rolled-out dough.
Roll the dough tightly into a log shape.
Cut the log into 6 equal pieces using a serrated knife.
Spray a pie plate with cooking spray and place the cinnamon rolls inside, arranging them evenly.
Preheat the oven to 400°F (204°C).
Bake the cinnamon rolls in the oven for about 15 minutes.
While the rolls are baking, prepare the icing by melting 3 tablespoons cream cheese and 1 tablespoon butter together.
Add 1 tablespoon powdered sweetener and a splash of vanilla extract to the melted mixture, then mix until smooth.
If needed, add a tiny bit of heavy cream to achieve the desired consistency for the icing.
