Add 3/4 cup of plain unflavored Greek yogurt to a mixing bowl.
Add 3 tablespoons of maple syrup, 1 tablespoon of melted coconut oil, 1 tablespoon of apple cider vinegar, and 2 teaspoons of vanilla extract to the bowl.
Blend the wet ingredients together on low until well combined.
Add 1 3/4 cups of blanched almond flour, 2/3 cup of tapioca flour, 1/2 cup of vanilla flavored protein powder, 1 tablespoon of baking powder, 3/4 teaspoon of baking soda, and 1/2 teaspoon of salt to the bowl.
Blend the dry ingredients with the wet ingredients until well combined, stopping when the mixture resembles a lightly sticky cookie dough.
Prepare an 8x8 inch pan with parchment paper and non-stick spray.
Dump the dough onto a large sheet of parchment paper and spread it into a rectangle about 10 inches wide and 13 inches long.
In a separate bowl, mix 1/4 cup of melted coconut oil, 1/2 cup of coconut sugar, and 1 tablespoon of cinnamon until well combined.
Spread the cinnamon and sugar mixture evenly over the dough, pressing it down gently with a spoon.
Using the parchment paper, roll the dough tightly from one edge to the other, sealing the edge at the end.
Divide the rolled dough into nine equal parts using visual guides and a sharp knife or dental floss to cut cleanly.
Place each piece into the prepared 8x8 inch pan, ensuring they are touching slightly.
Bake in a preheated 350°F oven for 22-24 minutes, or until the top is light golden brown.
For the glaze, mix 1/4 cup of plain Greek yogurt and 2 tablespoons of maple syrup until well combined.
Allow the cinnamon rolls to cool slightly before drizzling the glaze on top.
