Set up a double boiler by filling a pot about a third of the way with water and placing a large Pyrex bowl on top.

Heat the water on medium-high until it starts to steam.

Add 1/2 cup of cocoa butter to the bowl and allow it to melt as the steam warms the bottom of the bowl.

Once the cocoa butter has melted, reduce the heat to medium-low.

Sift 1/3 cup of cocoa powder to remove lumps and stir it into the melted cocoa butter.

Turn off the heat and add 3 tablespoons of whole milk powder, stirring until fully incorporated.

Gradually add 3/4 cup of powdered sugar, starting with half and then adding the rest, stirring continuously.

Stir the mixture for about 5 minutes to achieve a smooth consistency.

Remove the bowl from the pot and continue stirring at the table, pushing down on the mixture.

Pour the chocolate mixture into a mold (granola bar pan or candy bar molds).

Let the chocolate sit at room temperature for 30 to 40 minutes to set.

Optionally, place the chocolate in the refrigerator for 30 minutes to an hour to set completely.

Once set, remove the chocolate from the mold by squeezing and pushing it out.
