How to Make Buttered Shortbread Milk Chocolate Chip Cookies

Cover a 22 by 28 centimeters tray with baking parchment and press it down, scoring it with fingers for easy rolling.

In a mixer with a paddle beater, combine room temperature butter and sugar until light and fluffy, mixing until it turns white.

Pre-mix the chocolate chips with the flour and add to the butter-sugar mixture, mixing on low speed to avoid overmixing.

Transfer the dough to the prepared tray, shaping it to fit the lines marked by the parchment.

Dock the top of the dough with a fork or knife and pre-cut it into 10 pieces, leaving the edges intact.

Preheat the oven to 160 to 180 degrees Celsius (fan-assisted).

Bake the shortbread for around 25 minutes.

Once baked, sprinkle caster sugar on top while still warm and cut through the pre-marked lines, allowing to cool for 20 to 30 minutes.
