Welcome to Steve's kitchen for homemade mincemeat.

Use about 2.2 pounds (1 kilo) of dried fruits, such as candied peel, glace cherries, raisins, and currants.

Pour the dried fruits into a large mixing bowl.

Add 250 grams (9 ounces) of soft brown sugar to the bowl.

Add 175 grams (6 ounces) of suet to the mixture.

For spices, add 1 teaspoon of cinnamon and 2 teaspoons of mixed spice, along with grated fresh nutmeg (almost a whole nutmeg).

Quarter 3 Granny Smith apples, trim the core, and cut them into small cubes, then add to the bowl.

Zest 2 oranges and 2 lemons, adding all the zest to the bowl.

Juice the lemons and oranges, catching any seeds, and add the juice to the bowl.

Mix all the ingredients together with your hands until well combined.

Pour the mincemeat mixture into a baking tray and level it out.

Preheat the oven to 225°F (110°C) for a low bake.

Cover the baking tray tightly with foil to trap steam.

Bake the mincemeat in the oven for about 2 to 2.5 hours.

After baking, carefully remove the foil and check the mincemeat, which should smell delicious.

Add about 1/4 cup of sherry (or brandy) to the mincemeat and mix it in.

Taste a bit of the hot mincemeat to check the flavor.
