Preheat the oven to 400 degrees Fahrenheit.

Gather all materials: pastry ingredients, tart tins, baking racks, mixing bowl, measuring devices, ice water.

Mix 1 teaspoon of salt into 2 cups of all purpose flour.

Incorporate shortening into the flour mixture using a pastry blender until the mixture has approximately the same size pieces.

Add approximately 6 tablespoons of ice water to the mixture and incorporate with a knife.

Form the pastry into a ball and wrap it in Saran wrap. Chill in the fridge.
