Brazilian Grilled Pineapple

Cultural Context

Originating from Brazil, grilled pineapple is a popular dessert often served at churrascarias, where it complements savory grilled meats. The sweet and smoky flavor of the caramelized pineapple reflects the country's love for vibrant, tropical ingredients. Today, this dish has gained popularity worldwide, often enjoyed at barbecues and summer gatherings.

1

Grab the crown of the pineapple in one hand and the body in the other, twisting in opposite directions to remove the crown.

2

Cut a little bit off the bottom and top of the pineapple, then stand it straight up and down.

3

Begin shaving the sides off, following the contour of the fruit. Rotate the pineapple after each cut until the rind is completely removed.

4

Cut the pineapple straight down the middle. You can use a whole half or a quarter depending on how much you want to cook.

5

Chop the half pineapple into two pieces and remove the center core part as it is fibrous.

6

Cut each piece into two or three spears, depending on how thick you like them.

7

Mix together brown sugar, cinnamon, and a touch of salt for the topping.

8

Generously coat each pineapple spear on all sides with the sugar mixture.

9

Preheat a pan over medium heat and add a little bit of butter to prevent sticking and add flavor.

10

Load up the pineapple spears in the pan and cook on the first side for about 3 minutes.

11

After 3 minutes, flip each piece and cook for another 3 minutes on the second side.

12

Flip the spears onto their back side and cook for an additional 3 minutes.

13

Once done cooking on the last side, pull them off and eat immediately.
