Greek yogurt reduces calories while maintaining creaminess
Clean the celery root by removing the lower and upper parts.
Peel the celery root from the side using a sharp knife.
Wash the cleaned celery root.
Cut the celery root into cubes, size doesn't matter.
Chop the small potato.
Heat a few drops of olive oil in a pan.
Add the chopped onion to the olive oil and sauté until it becomes glassy.
Add the cubed celery and chopped potato to the pan and lightly fry them to release better taste.
Pour about 500 ml of water over the sautéed vegetables to cover them.
Add the 2 soup cubes to the mixture.
Cover the pan and let it cook quietly for about 20 minutes.
Check if the potatoes and celery are soft by using a spatula to cut through them.
Remove the broth from the heat.
Use a stick mixer to blend the mixture until smooth, adding more water if needed for desired consistency.
Add 50 ml of cooking cream to the blended soup and let it boil for another 5 minutes.
Taste the soup and add more salt if necessary, then let it boil for another 5 minutes.
