Marinate steak with garlic, ginger, red chili powder, cumin, coriander, turmeric, black pepper, salt, and lemon juice for at least 30 minutes.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Add marinated steak to the skillet, searing for 4-5 minutes on each side until a crust forms.
Reduce heat to medium and cook for an additional 3-4 minutes for medium-rare doneness.
Use a meat thermometer to check the internal temperature, aiming for 130-135°F for medium-rare.
Remove steak from the skillet and let it rest for 5 minutes to retain juices.
In the same skillet, add sliced onions and green chili; sauté until onions are translucent, about 3-4 minutes.
Slice the rested steak against the grain into thin strips.
Serve the steak topped with sautéed onions and fresh cilantro.
