Add the washed mutton in a pressure cooker with 2 cups of water. Pressure cook for 15 minutes.

In a pan add oil and onion. Fry until it's brown. Remove from the pan and let it cool.

Mash the fried onions and add them to the yogurt. Mix well and keep aside.

In a bowl add yogurt, salt, paprika, coriander powder, cumin seed powder, and minced ginger-garlic. Mix well and keep aside.

In a pan add oil and a pinch of cumin seeds. Add bayleaf, cinnamon stick, green cardamom, black cardamom, anise star, and dry red chili. Fry for a minute and add the spiced yogurt mix. Fry for 2-3 minutes or until oil separates.

Add the boiled mutton. Cook for 2-3 minutes and then add the fried onion yogurt mix. Cook for another 2-3 minutes.

Add 1/2 cup of water. Bring it to a boil. Cover and cook for 2-3 minutes.

Add fresh cilantro and fried onions. Enjoy.
