Pakoras are a beloved Indian snack, originating as a way to use seasonal vegetables. Traditionally enjoyed during monsoon season, they are often served with chai. Today, pakoras are a popular street food, enjoyed worldwide, with various regional adaptations.

Add 3 cups of chickpea flour to a bowl.
Add 1/2 tablespoon crushed coriander, 1 teaspoon crushed cumin, 1 tablespoon crushed red chili, 1/2 teaspoon turmeric, and 1/4 teaspoon salt to the flour.
Mix well and gradually add 1.5 cups of water while stirring until a smooth batter forms.
Add 2-3 tablespoons of hot oil to the batter and mix well.
Prepare stuffing by mashing 1 medium potato and mixing it with 1/4 teaspoon salt, 1 teaspoon coriander powder, 1 tablespoon chopped fresh coriander, 1 teaspoon pomegranate powder, and 1 teaspoon fresh lemon juice.
Chop vegetables (1 medium eggplant, 1 medium potato, 5-6 spinach leaves, 2 cups cauliflower, 2 medium onions) and sprinkle with 2-3 pinches of red chili powder and salt.
Stuff the mashed potato mixture into the eggplant pieces and press gently.
Dip the prepared vegetables into the chickpea batter and fry them in preheated oil over medium flame.
Fry until golden brown, stirring occasionally to ensure even cooking.
Remove the pakoras and place them on a cooling rack.
