Baingan ka Chokha
Cultural Context
Baingan ka Chokha is a traditional dish from the Indian state of Bihar, often served with litti (wheat balls) or rice. This smoky eggplant mash celebrates the flavors of roasted vegetables, enhanced with spices and herbs. It is a staple in many Indian households, especially during festivals and gatherings, and has gained popularity across India for its simplicity and robust flavor.

Olive oil provides a healthier fat profile while vegetable oil is more economical.
Cut the stems off the eggplants and slice them into large pieces.
Cut the potatoes into large pieces, similar to the eggplants.
In a pressure cooker, layer the potatoes at the bottom.
Place 2 whole tomatoes on top of the potatoes.
Add the cut eggplants on top of the tomatoes.
Add 2-4 cloves of garlic, 1 teaspoon of salt, and 1 teaspoon of mustard oil over the vegetables.
Close the lid of the pressure cooker and set the flame to low-medium.
Cook for 15 minutes.
After 15 minutes, check the vegetables; the tomatoes should be soft and the eggplants and potatoes should be well-cooked.
Remove the cooked vegetables from the cooker, separating the tomatoes.
Mash the eggplants and potatoes together while they are still hot to avoid them becoming too firm.
In a separate bowl, crush the green chili and garlic together lightly.
Add a little more salt to taste, chopped cilantro, and the mashed tomatoes to the mixture.
Mix everything together until well combined.
Garnish with additional cilantro before serving.
