Wash 1 cup of mixed dal 2-3 times until the water runs clear.

Add the washed dal to a pressure cooker with 2 glasses of water (approximately 0.5 liters).

Add 1/2 teaspoon of turmeric powder, 1 tablespoon of salt, and 1 teaspoon of oil to the dal.

Peel and add 3 medium-sized potatoes to the pressure cooker.

Close the lid and cook on high flame until 1 pressure is reached, then reduce to low flame and cook for 2 whistles.

While the dal is cooking, wash 2 glasses of rice 2-3 times and add it to a large pot with 4 glasses of water.

If desired, add 1/2 teaspoon of salt to the rice.

Bring the rice to a boil on high flame, then stir to prevent sticking.

Once boiling, reduce the flame to medium and keep the lid slightly open to prevent overflow.

When the water level decreases, stir the rice again and reduce the flame to low, covering it completely to cook for 5 minutes.

After 5 minutes, check the rice for doneness and set it aside once cooked.

Once the pressure cooker cools down, open it and remove the boiled potatoes and check the dal.

Mash the boiled potatoes in a bowl and mix in the dal, adding 2 glasses of water to adjust the consistency.

Heat a ladle on the stove and add 1 teaspoon of mustard oil.

Add 4 chopped garlic cloves and 2 dried red chilies to the hot oil and sauté until fragrant.

Pour the tempered oil over the dal and cover it immediately to infuse the flavors.

Mash the potatoes and add 1 chopped onion, 1 chopped tomato, 4-5 chopped green chilies, 1 tablespoon of pickled chili, 1/2 tablespoon of coriander leaves, and 1 teaspoon of mustard oil to the bowl.

Mix everything well to prepare the chokha.

Serve the dal, rice, and chokha together, garnished with cucumber.
