300 grams chicken leg boneless, cut into ½ inch cubes
2 tbsps olive oil
1½ tbsps finely chopped garlic
2 tsps red chilli flakes
¼ tsp turmeric powder
½ tsp dried thyme
Crushed black peppercorns to taste
Salt to taste
½ tsp cumin powder
1 tsp paprika powder
2 medium white onion, grated
½ cup thick yogurt
2 tsps lemon juice
2 small tomatoes
2 small white onions
2 green jalapenos
Butter for grilling
Khabus to serve

To make the marination, take olive oil in a large bowl. Add garlic, red chilli flakes, turmeric powder, dried thyme, crushed black peppercorns, salt, cumin powder, paprika powder, and squeeze the juice of white onion directly into it. Add yogurt, and lemon juice and whisk well. Add the chicken cubes and mix till each cube is well coated with the marinade. Set aside to marinate for 2-3 hours.

Cut the tomatoes and white onions in half. Diagonally cut the green jalapenos in half.

Alternatively thread green jalapeno, onion and tomato on to skewers.

Thread 8-10 chicken cubes on to the skewers.

Heat a non-stick grill pan. Brush with some butter and place the chicken skewers along with vegetable skewers on it and grill on all sides for 2-3 minutes or till done. Baste with butter in between.

Serve hot with khabus.
