½ cup (118ml) rice vinegar
½ cup (118ml) soy sauce
8 cloves of garlic
1 tbsp avocado oil
2 tablespoons brown sugar
1 tsp coarse cracked pepper
3 bay leaves
1 1/4 cup (310 ml) water
1/2 tbsp unsalted butter
1/2 tsp salt
1 1/2 cup (350ml) hot water
4 green onions sprigs

Marinate chicken thighs in rice vinegar, soy sauce, and half of the minced garlic for at least 30 minutes or overnight.

Heat 1 tbsp avocado oil over high heat.

Remove chicken from the marinade and fry for 2-3 minutes on each side until lightly browned, then set aside.

Reduce heat to medium and add 1 tbsp avocado oil; cook the remaining garlic for about 1 minute.

Pour the reserved marinade into the pan, add brown sugar, cracked pepper, bay leaves, and water; mix well and bring to a boil.

In a medium saucepan, melt 1/2 tbsp unsalted butter over medium heat and sauté rice for 2-3 minutes until lightly toasted.

Add 1/2 tsp salt and pour in hot water; bring to a boil, then cover and simmer for 10 minutes.
