4 lbs pork shoulder sliced 1 inch thick
1/4 cup homemade jerk seasoning
1 tsp dry jerk seasoning
1 tsp all purpose seasoning
1 tsp bouillon
1 tsp seasoned salt
1 tsp garlic powder
1 tsp onion powder
1 tbsp cassareep or browning
2 tbsp bbq jerk sauce
1/2 cup bbq sauce or choice
1/2 cup jerk bbq sauce
1/4 cup Ketchup
1 tsp jerk seasoning
1 tbsp sugar
1/4 onion
4 cloves garlic
2 scotch bonnet peppers
5-6 stalks thyme
4 stalks scallion/green onions
2 tbsp all spice/Pimento berries
1 tsp cinnamon
1 tsp salt
juice of 1 lemon
1 tbsp vinegar
2 tbsp oil
1-2 tbsp browning or soy sauce for color

Blend all ingredients for the jerk seasoning blend together: onion, garlic, scotch bonnet peppers, thyme, scallion, all spice, cinnamon, salt, sugar, lemon juice, vinegar, oil, and browning or soy sauce.

Combine the pork shoulder with the homemade jerk seasoning, dry jerk seasoning, all purpose seasoning, bouillon, seasoned salt, garlic powder, onion powder, cassareep, and BBQ jerk sauce.

Marinate the pork for at least 4 hours, preferably overnight.

Remove the pork from the marinade and let excess marinade drip off.
