1

Knead the flour with a little maida, salt, a dash of oil, and water until tight, not loose.

2

Cover the dough with oil or a wet cloth and let it rest for 10-15 minutes.

3

Chop the cauliflower, mash the boiled potatoes and paneer, and prepare the stuffing without cooking the vegetables.

4

Add fresh coriander, grated ginger, dry fenugreek leaves, whole cumin seeds, finely chopped green chilies, turmeric, chili powder, garam masala, and salt to the stuffing.

5

Mix in chaat masala right before stuffing to prevent water release.

6

Divide the rested dough into equal-sized portions and roll each into a ball.

7

Press the dough ball to create a bowl shape for stuffing.

8

Fill the bowl with the prepared stuffing and pinch to seal it.

9

Roll out the stuffed dough gently, sprinkling dry flour to prevent sticking.

10

Cook the paratha on a hot griddle, flipping to cook both sides until golden brown, adding oil as needed.

11

Repeat the rolling and cooking process for the remaining dough and stuffing.

12

Serve hot with mint raita.
