Today, crunchy roasted chickpeas are enjoyed worldwide, often seasoned with various spices to suit different palates.

Drain and rinse the canned chickpeas and let them sit to get rid of all the liquid.
Use a paper towel to ensure the chickpeas are absolutely dry.
Spread the dried chickpeas on a sheet pan in a single layer.
Drizzle 2-3 tablespoons of extra virgin olive oil over the chickpeas.
Add a big pinch of kosher salt and toss to coat the chickpeas evenly with the oil and salt.
Pick out any extra skins from the chickpeas to prevent burning in the oven.
Preheat the oven to 400°F (200°C).
Place the chickpeas in the preheated oven and roast for 20-30 minutes, shaking the pan every 10 minutes for even cooking.
Once roasted, remove the chickpeas from the oven and sprinkle with a spice mixture of za'atar, sumac, and harissa while they are still hot.
Mix the chickpeas with the spices to coat them evenly.
Let the chickpeas cool before storing them in a jar.
