1 small bunch of methi leaves (fenugreek)

In a large bowl, mix 2 cups of beet flour with 1/2 teaspoon turmeric powder, 1 teaspoon cumin powder, 1 teaspoon garam masala powder, 1 teaspoon chat masala powder, and 1 teaspoon salt.

Add 1 teaspoon chopped garlic, 1 teaspoon finely chopped ginger, and 1 teaspoon finely chopped green chili to the flour mixture.

Next, add 1 tablespoon of curd and 2 teaspoons of oil to the bowl.

Add the cleaned methi leaves (roughly about a small bowl) to the mixture and combine everything together.

Gradually pour water to mix the dough until well combined, kneading for about 3 to 4 minutes until smooth.

Rub 2 drops of oil over the dough, cover the bowl, and let it rest for about 30 minutes.

Divide the dough into equal-sized balls and roll each ball out to a medium thickness on a floured surface.

Heat a tawa until hot and place the rolled out paratha on it.

Cook the paratha on both sides until light brown spots appear, adding ghee on both sides as it cooks.
