Prepare water by heating slightly, not boiling, with 1 teaspoon salt and 4 teaspoons ghee until everything dissolves.
In a bowl, mix 150 grams chickpea flour and 50 grams urad flour together.
Add 1 teaspoon black pepper and a pinch of white chili powder to the flour mixture.
Gradually add the prepared water to the flour mixture to form a stiff dough, ensuring not to add too much water at once.
Knead the dough for about 5 minutes until smooth and slightly shiny.
Divide the dough into two parts, rolling each into a ball to prevent drying out.
Roll out each ball into flat discs, not too thick or too thin, similar to puris.
Puncture the rolled discs with a fork to prevent puffing during frying.
Place the rolled discs on a cloth to dry slightly before frying.
Heat oil in a pan for deep frying, reducing the heat once hot.
Fry the discs in batches for about 3 minutes until golden brown, flipping occasionally.
Remove the fried discs and let them cool before storing in an airtight container.
