Put all oxtail in a bowl and season with steak seasoning, all-purpose seasoning, ginger, Nando's marinade, garlic, and Maggi liquid seasoning.
Mix the seasonings into the oxtail with your hands to ensure the meat is well-marinated.
Brown the marinated oxtail in a pot to enhance the flavor, allowing the juices to flow.
Transfer the browned oxtail into a pot and add a generous amount of water for cooking.
Add paprika to the pot with the oxtail and water.
Blend onions and add them to the oxtail in the pot.
Fry the mixture together, mixing well.
Taste the seasoning and adjust if necessary, adding more liquid seasoning or Maggi if needed.
Blend the tomatoes and add them to the pot, squashing the tomato skins for texture.
Add Royko seasoning to thicken the soup and a beef cube for added flavor.
Keep tasting the meat to check if it's cooked; if not, continue adding water as needed.
Let the dish simmer until ready and then plate the oxtail stew.
