Giant Brazilian Cheese Bread

Low-fat cheese reduces calories while maintaining flavor.
Mix 2 eggs with 1 cup of vegetable oil and 2 cups of whole milk in a large mixing bowl.
Use an electric mixer or mix by hand for about 1 minute until combined.
Add 4 cups of tapioca flour, 1.5 cups of grated Parmesan cheese, 0.5 cups of shredded mozzarella, and 1 teaspoon of sea salt to the mixture.
Continue mixing with the electric mixer for another minute until all ingredients are well incorporated and the batter is smooth.
Transfer the batter into a container or dispenser for portioning into the muffin pan.
Spray the muffin pan with nonstick cooking spray.
Fill each well of the muffin pan with the batter, about half to 3/4 full, to allow for blooming during baking.
Preheat the oven to 350°F and bake for about 25 to 30 minutes until they bloom and are golden brown.
