Low-fat cheese reduces calories while maintaining flavor.
Heat 2/3 cup plus 2 tablespoons of whole milk, 1/2 cup of vegetable oil, and 1.5 tablespoons of unsalted butter in a saucepan over high heat until boiling.
In a mixing bowl, combine 3 cups of tapioca starch, 2 teaspoons of kosher salt, and 1/4 teaspoon of baking powder.
Once the liquids are boiling, add them to the dry mixture in the mixer while it's on low, and mix for about 2-3 minutes until the starch hydrates.
Add 2 large eggs to the mixture and continue mixing on low for about 8 minutes until the dough is shiny and resembles frosting.
Incorporate 3.5 ounces of grated Parmesan cheese and 3.5 ounces of grated Pecorino Romano cheese into the dough by mixing on low for 30-60 seconds.
Refrigerate the dough for about 2 hours to firm it up for shaping.
After chilling, shape the dough into 8 rolls, wetting hands to prevent sticking.
Brush the rolls with an egg glaze made from 1 large egg, 1 teaspoon of water, and 1/4 teaspoon of kosher salt.
Place the rolls on a baking sheet, using a second sheet underneath to prevent burning.
Bake in a preheated oven at 450 degrees Fahrenheit, then lower to 375 degrees Fahrenheit for about 40 minutes, rotating halfway through.
