Separate the kataifi pastry strands and mix with melted butter until evenly coated.
Spread half of the buttered kataifi in a greased baking dish, pressing down firmly.
In a saucepan, combine sugar, water, rose water, and orange blossom water; bring to a boil until sugar dissolves, then remove from heat.
In a separate bowl, mix ground pistachios, ground almonds, cinnamon, and vanilla extract.
Spread the nut mixture evenly over the kataifi layer in the baking dish.
Top with the remaining kataifi, pressing down gently to form a roll.
Bake in the preheated oven for 30-35 minutes, or until golden brown.
Remove from the oven and drizzle the sugar syrup over the hot rolls.
Let cool for 10 minutes before slicing into rolls.
Serve warm, garnished with powdered sugar, chopped walnuts, and sesame seeds.
